Ingredients
  

Salad
  • 2 cups cooked chicken diced
  • 2 cups corn kernels grilled or sautéed
  • 0.5 cup cotija cheese crumbled
  • 0.25 cup red onion diced
  • 0.5 cup cherry tomatoes halved
  • 1 avocado diced
  • 0.25 cup cilantro chopped
Dressing
  • 0.5 cup mayonnaise
  • 0.25 cup Greek yogurt
  • 2 tbsp lime juice fresh
  • 1 tsp chili powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper

Method
 

  1. Cook corn in a skillet or grill pan until slightly charred, then cool.
  2. Prepare cooked chicken by dicing or shredding.
  3. Whisk together mayonnaise, yogurt, lime juice, spices, salt, and pepper.
  4. Combine chicken, corn, onion, tomatoes, cilantro, and avocado in a large bowl.
  5. Pour dressing over salad and toss gently.
  6. Fold in cotija cheese.
  7. Taste and adjust seasoning.
  8. Serve immediately or chill before serving.

Notes

Add jalapeño for spice or substitute feta if cotija is unavailable.
