Ingredients
  

Sugar Cookie Crust
  • 2 cups crushed sugar cookies
  • 0.5 cup unsalted butter melted
Cheesecake Filling
  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 3 eggs large
  • 0.5 cup sour cream
  • 0.25 cup heavy cream
  • 1 tbsp vanilla extract
White Chocolate Ganache
  • 8 oz white chocolate chopped
  • 0.5 cup heavy cream heated

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 325°F (165°C). Prepare a springform pan.
  2. Mix crushed sugar cookies with melted butter and press into pan.
  3. Bake crust for 10 minutes and cool.
  4. Beat cream cheese until smooth. Add sugar and mix well.
  5. Add eggs one at a time, then sour cream, cream, and vanilla.
  6. Pour filling over crust and bake 50–55 minutes.
  7. Cool gradually, then chill at least 4 hours.
  8. Pour hot cream over white chocolate, stir until smooth.
  9. Spread ganache over cheesecake and chill until set.

Notes

For best texture, chill overnight before serving.
