Ingredients
  

Cookie Dough
  • 2 cups almond flour
  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar substitute erythritol or monk fruit blend
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.75 cup sugar-free chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream softened butter and sugar substitute until light and fluffy.
  3. Beat in egg and vanilla extract until smooth.
  4. Whisk almond flour, baking soda, and salt in a separate bowl.
  5. Gradually mix dry ingredients into wet ingredients to form a dough.
  6. Fold in sugar-free chocolate chips.
  7. Scoop dough onto baking sheet and flatten slightly.
  8. Bake 10–12 minutes until edges are lightly golden. Cool before serving.

Notes

Do not overbake; cookies will continue to firm up as they cool. Store in an airtight container for best freshness.
