Method
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss sweet potato slices with olive oil, salt, and pepper.
- Arrange slices in a single layer and roast 20–25 minutes, flipping halfway, until tender.
- Mix goat cheese, garlic, thyme, and honey until smooth.
- Layer roasted sweet potato slices with goat cheese mixture to form stacks.
- Return stacks to oven for 5–7 minutes to warm through if desired.
- Drizzle with honey and garnish with thyme and walnuts before serving.
Notes
Stacks can be assembled ahead and reheated before serving.
