Ingredients
  

Sweet Potato Stacks
  • 3 large sweet potatoes peeled and sliced into rounds
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 5 oz goat cheese softened
  • 1 tbsp honey plus more for drizzling
  • 1 tsp fresh thyme leaves
  • 1 clove garlic minced
  • 0.25 cup walnuts chopped, optional

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss sweet potato slices with olive oil, salt, and pepper.
  3. Arrange slices in a single layer and roast 20–25 minutes, flipping halfway, until tender.
  4. Mix goat cheese, garlic, thyme, and honey until smooth.
  5. Layer roasted sweet potato slices with goat cheese mixture to form stacks.
  6. Return stacks to oven for 5–7 minutes to warm through if desired.
  7. Drizzle with honey and garnish with thyme and walnuts before serving.

Notes

Stacks can be assembled ahead and reheated before serving.
