Ingredients
  

  • 2 large sweet potatoes peeled and diced
  • 2 tbsp olive oil
  • 1 small red onion diced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • 0.5 tsp ground cumin
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add diced sweet potatoes and cook undisturbed for 4–5 minutes to develop crisp edges.
  3. Season with salt, pepper, paprika, and cumin. Stir and cook until tender.
  4. Add onion and bell peppers and sauté until softened.
  5. Stir in garlic and cook briefly until fragrant.
  6. Garnish with fresh herbs and serve hot.

Serve with eggs or avocado for a complete meal.
