Ingredients
  

Main
  • 4 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 large onion, sliced
  • 8 oz sliced mushrooms
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp black pepper
  • 1 tsp salt
  • 0.5 cup chicken broth
  • 1 cup shredded Monterey Jack cheese
  • fresh parsley for garnish

Equipment

  • Mixing bowls
  • Baking sheet

  • Hand mixer or stand mixer

Method
 

  1. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat olive oil in a skillet and sear chicken 5–6 minutes per side. Remove and set aside.
  3. Add butter to skillet and sauté onions and mushrooms until caramelized.
  4. Deglaze pan with chicken broth and simmer 2 minutes.
  5. Return chicken to skillet and top with vegetables.
  6. Add cheese, cover, and cook until melted.
  7. Garnish with parsley and serve warm.

Notes

Serve with mashed potatoes or seasoned rice.
