Ingredients
  

Vegetables
  • 4 cups green cabbage shredded
  • 1 cup purple cabbage shredded
  • 1 cup carrots grated
Dressing
  • 0.5 cup plain Greek yogurt
  • 2 tbsp light mayonnaise
  • 1.5 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp parsley chopped

Method
 

  1. Shred cabbage and grate carrots, then place in a large bowl.
  2. Lightly salt cabbage, let sit 10 minutes, and pat dry.
  3. Whisk yogurt, mayonnaise, vinegar, mustard, honey, salt, and pepper until smooth.
  4. Pour dressing over vegetables and toss until evenly coated.
  5. Add parsley and mix well.
  6. Chill at least 30 minutes before serving.

Notes

For best texture, mix dressing shortly before serving.
