- Place bacon in a cold skillet over medium heat and cook until crisp. Drain on paper towels and keep warm.
- Split and butter the English muffins or bread. Toast until golden.
- In the same skillet, add a little butter if needed and cook eggs to desired doneness. Season with salt and pepper.
- Assemble each stack by placing toasted bread on a plate, layering with bacon, and topping with an egg.
- Drizzle with hollandaise or butter, add lemon juice if using, and garnish with fresh herbs. Serve immediately.
