Ingredients
  

Salad Base
  • 4 cups green cabbage shredded
  • 2 cups purple cabbage shredded
  • 1 cup carrots julienned
  • 1 cup edamame cooked and cooled
Crunchy Toppings
  • 0.5 cup sliced almonds
  • 0.5 cup crispy wonton strips
  • 1 tbsp sesame seeds toasted
Dressing
  • 0.25 cup soy sauce
  • 3 tbsp rice vinegar
  • 2 tbsp sesame oil
  • 2 tbsp honey
  • 1 tbsp ginger fresh grated
  • 1 tsp garlic minced

Equipment

  • Large mixing bowl
  • Small bowl or jar
  • Whisk
  • Sharp knife

Method
 

  1. Shred green and purple cabbage and place in a large bowl.
  2. Add carrots, edamame, green onions, and cilantro.
  3. Whisk all dressing ingredients together until emulsified.
  4. Pour dressing over salad and toss well to coat.
  5. Top with almonds, wonton strips, and sesame seeds before serving.

Notes

Add toppings just before serving for maximum crunch.
