Ultimate Pesto Grilled Cheese

Ingredients
  

Sandwich
  • 4 slices sourdough bread
  • 2 tbsp butter softened
  • 3 tbsp basil pesto
  • 4 slices mozzarella cheese
  • 2 slices provolone cheese
  • 2 tbsp Parmesan cheese grated

Equipment

  • Skillet or griddle
  • Spatula
  • Butter knife
  • Cutting board

Method
 

  1. Spread butter on one side of each bread slice.
  2. Spread pesto on the unbuttered sides.
  3. Layer mozzarella, provolone, and Parmesan on two slices.
  4. Top with remaining bread slices, buttered sides facing outward.
  5. Heat skillet over medium-low heat.
  6. Cook sandwiches 3–5 minutes per side until golden brown and cheese melts.
  7. Rest 1 minute, slice, and serve.

Notes

Use low heat for best melt and crisp texture. Try adding tomatoes or chicken for variation.
