Ingredients
  

Sandwich Base
  • 4 slices sourdough bread
  • 4 tbsp unsalted butter softened
  • 0.5 cup basil pesto
  • 1 cup mozzarella cheese shredded
  • 4 slices provolone cheese

Equipment

  • Skillet
  • Spatula
  • Butter knife
  • Cutting board

Method
 

  1. Butter one side of each slice of bread.
  2. Place two slices butter-side down and top with half of the mozzarella.
  3. Spread pesto evenly over the cheese, then layer provolone on top.
  4. Add remaining mozzarella and top with the other bread slices, butter-side up.
  5. Heat a skillet over medium heat and cook sandwiches 3–4 minutes per side until golden and cheese is melted.
  6. Remove from heat, rest briefly, slice, and serve warm.

Notes

For extra flavor, add sliced tomatoes, grilled chicken, or roasted vegetables inside the sandwich before cooking.
