  • 4 beets roasted and sliced
  • 2 cucumbers sliced
  • 0.75 cup feta cheese crumbled
  • 3 tbsp olive oil extra virgin
  • 2 tbsp lemon juice fresh
  • 2 tbsp fresh dill chopped
  • salt to taste
  • black pepper to taste

Method
 

  1. Roast beets until tender, cool, peel, and slice.
  2. Combine beets and cucumbers in a large bowl.
  3. Whisk olive oil and lemon juice together.
  4. Pour dressing over vegetables and toss gently.
  5. Add dill, salt, and pepper.
  6. Fold in feta cheese and chill briefly before serving.

Notes

This salad tastes even better after chilling for 15 minutes.
