Ingredients
  

Pasta
  • 12 oz penne pasta
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 0.5 cup onion finely diced
  • 1 tsp red pepper flakes
Sauce
  • 2 tbsp tomato paste
  • 0.5 cup crushed tomatoes
  • 0.25 cup vodka
  • 0.75 cup heavy cream
  • 0.5 cup parmesan cheese grated
  • salt to taste
  • black pepper to taste
  • fresh basil for garnish

Equipment

  • Large pot
  • Large skillet
  • Wooden spoon
  • Colander

Method
 

  1. Cook pasta in salted boiling water until al dente. Reserve pasta water and drain.
  2. Heat olive oil in skillet and sauté onion until soft.
  3. Add garlic and red pepper flakes and cook until fragrant.
  4. Stir in tomato paste and cook 2 minutes.
  5. Add crushed tomatoes and vodka and simmer until slightly reduced.
  6. Lower heat and stir in cream until smooth.
  7. Add parmesan cheese and stir until melted.
  8. Season with salt and pepper.
  9. Add pasta and toss, using reserved pasta water if needed.
  10. Serve hot garnished with basil and extra cheese.

Notes

Adjust spice level by increasing or reducing chili flakes.
