Ingredients
  

Whipped Feta Base
  • 8 oz block feta cheese drained
  • 0.5 cup plain Greek yogurt
  • 2 tbsp olive oil
  • 1 clove garlic minced
  • 1 tbsp lemon juice
  • 0.5 tsp lemon zest
  • 0.25 tsp black pepper
Bruschetta Topping
  • 1.5 cups cherry tomatoes finely chopped
  • 1 tbsp olive oil
  • 1 clove garlic grated
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp fresh basil sliced
  • 1 tsp balsamic glaze optional

Method
 

  1. Add feta, Greek yogurt, olive oil, garlic, lemon juice, lemon zest, and pepper to a food processor.
  2. Blend until smooth and creamy, scraping down the sides as needed.
  3. Adjust texture with a teaspoon of water or olive oil if needed.
  4. Spread whipped feta into a shallow serving bowl.
  5. In a bowl, mix chopped tomatoes, olive oil, garlic, salt, and pepper.
  6. Let tomato mixture sit for 10 minutes, then stir in basil.
  7. Spoon bruschetta mixture over whipped feta.
  8. Drizzle with balsamic glaze and olive oil before serving.

Notes

Best served fresh. Add tomato topping just before serving for best texture.
