Ingredients
  

Cookie Dough
  • 2.25 cups all-purpose flour
  • 1 tbsp ground ginger
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.25 tsp cloves optional
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1 egg large
  • 0.25 cup molasses
  • 1 tsp vanilla extract
  • 0.25 cup granulated sugar for rolling
  • 2 tbsp coarse sugar optional
White Chocolate Coating
  • 1.5 cups white chocolate chips
  • 1 tsp coconut oil optional

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, ginger, cinnamon, nutmeg, cloves, baking soda, baking powder, and salt.
  3. Cream butter and brown sugar until light and fluffy. Add egg, molasses, and vanilla, mixing well.
  4. Gradually mix in dry ingredients until a thick dough forms.
  5. Roll dough into balls and coat in granulated and coarse sugar.
  6. Bake 9–11 minutes until crackled on top and soft in the center. Cool completely.
  7. Melt white chocolate and coconut oil in the microwave, stirring until smooth.
  8. Dip half of each cooled cookie into melted white chocolate and let set on parchment.

Notes

For extra spice, add 1 tsp orange zest or chopped crystallized ginger.
