Ingredients
  

Salad Base
  • 6 eggs hard boiled
  • 1 avocado ripe
  • 2 tbsp Greek yogurt
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 0.25 cup red onion chopped
  • 0.25 cup celery chopped
  • 2 tbsp fresh parsley chopped
  • 1 tsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Boil eggs for 9–10 minutes, then cool in ice water and peel.
  2. Chop eggs into bite-size pieces.
  3. Mash avocado with lemon juice, yogurt, mustard, olive oil, salt, and pepper.
  4. Add eggs, onion, celery, and herbs.
  5. Gently fold until combined.
  6. Taste and adjust seasoning.
  7. Serve immediately or chill before serving.

Notes

Best eaten fresh. Press plastic wrap onto surface before refrigerating to prevent browning.
