- Boil eggs for 9–10 minutes, then cool in ice water and peel.
- Chop eggs into bite-size pieces.
- Mash avocado with lemon juice, yogurt, mustard, olive oil, salt, and pepper.
- Add eggs, onion, celery, and herbs.
- Gently fold until combined.
- Taste and adjust seasoning.
- Serve immediately or chill before serving.
Notes
Best eaten fresh. Press plastic wrap onto surface before refrigerating to prevent browning.
