Ingredients
  

Salad
  • 2 red onions thinly sliced
  • 1 tbsp sumac plus extra for garnish
  • 1/4 cup lemon juice freshly squeezed
  • 3 tbsp olive oil extra virgin
  • 2 tbsp parsley finely chopped
  • 1/2 tsp salt adjust to taste
  • 1/4 tsp black pepper freshly ground
  • pinch chili flakes optional

Method
 

  1. Peel and thinly slice the red onions. Soak in cold water for 10 minutes if desired, then drain.
  2. In a small bowl, whisk together sumac, lemon juice, olive oil, salt, and black pepper.
  3. Place onions in a large mixing bowl and pour the dressing over them. Toss to coat evenly.
  4. Add chopped parsley and gently mix to combine.
  5. Chill for 15–30 minutes if desired, then serve. Garnish with extra sumac and parsley.

Notes

Serve fresh for best taste. Can store in refrigerator for up to 24 hours.
